APRIL VIEWS 2011 – Our Earth

April Views - Our EarthRecent earthquakes and the potential of another looming is not something we wish to hear about, however I would like to shed some light on what I think is happening here. Natural disasters are brought upon us to teach us about LOVE, rather than fear. Although it’s a good idea to prepare for what could come, the focus now is to LOVE those experiencing rough times, instead of dwelling in the fear and insecurity we have for our own lives and well being. The media does a great job putting all sorts of images in our minds, however what we can do is truly imagine the situation the people of New Zealand and Japan are in, and then feel our hearts open. It’s with this openness we can give and offer our support. Tragedies like earthquakes actually bring people together on this earth we all share.

Earth Day is approaching on April 22nd and I encourage you to look towards it with light, love and a positive feeling that allows you to nurture it and its inhabitants with compassion. As the days become longer and the light of spring shines upon you, offer blessings to our community, our country and our world.

Wishing you peace and Body Harmony,

Namaste

Green Tip – Kale Chips

Green Tip - Kale ChipsWith Easter just around the corner, it’s easy to get carried away with a sweet tooth. It’s not that we should deprive ourselves of enjoying a few treats, but a few can quickly become too many! A healthy, tasty and crunchy alternative are kale chips! Yes, these greens can be done up quickly and are a good way to add nutrition to your snacking! Hope you enjoy these alongside a few chocolate eggs.

Kale Chips (Black or Curly Kale)

1. Clean and spin dry kale.
2. Remove spines and rip them into smaller bits with fingers, moisten with a
teaspoon or two of olive (or preferred) oil. Do not over oil! Some people also add a touch of balsamic vinegar.
3. Spread onto baking sheet and cook at 375°F for 10 to 12 minutes, turning about halfway through cooking process. They are not as nice if they brown.
4. Remove from oven and add salt.
